Ingredients:

Method:

  1. Heat peanut oil in hot wok
  2. Add shallots and cook for a few seconds before adding the egg
  3. Once mixture resembles a light omelette, add peas, ham and prawns
  4. Stir well until all ingredients are heated through
  5. Add cooked rice and soy sauce to taste and mix until all ingredients are combined
  6. Serve onto warm plates and garnish with sliced shallots

Green Chicken Curry

Ingredients:

Method:

  1. Heat 100 mls of coconut milk in saucepan and add curry paste. Cook over moderate heat for 3-5 minutes or when it smells fragrant
  2. Add cubed chicken and remainder of coconut milk and continue to cook over a gentle heat until the chicken is cooked
  3. Add chopped green chillies and lime leaves and cook for a few minutes
  4. Add fish sauce and sugar to taste
  5. Stir in basil leaves and coriander and serve with steamed jasmine rice

Method:

  1. Prepare prawns and pork as a smooth velvet paste using a food processors and a little salt and water to combine
  2. Combine meats with the remaining ingredients for filling
  3. Separate wanton skins and spoon a small amount of filling into each wrapper. Seal edges with egg mixture and bring all sides of the wrapper into the middle and squeeze like a parcel
  4. Place folded wanton onto a clean lightly greased tray and cover with a damp cloth to stop from drying out
  5. Heat water in a medium pan and allow a bamboo steamer to sit on top (It needs to completely cover the perimeter of the saucepan to stop steam escaping out the sides)
  6. Place wantons carefully in the steamer and don’t allow them to touch as they will stick together. An idea is to lightly oil the basket too as this will stop them from sticking to the bottom of the steamer!
  7. Serve with the appropriate dipping sauce and garnish

Recipe makes approximately 30 wantons. A variety of dipping sauces can be used; sweet chilli, soy or coriander and lemon grass.
