Ingredients:
- 4 cups of cooked jasmine rice
- 4 sliced shallots
- 2 eggs
- 50g defrosted peas
- 75g cooked leg ham
- 12 medium cooked prawns peeled and de-veined
- 50mls peanut oil
- 50mls soy sauce
- Sliced shallots for garnish
(Serves 4)
Method:
- Heat peanut oil in hot wok
- Add shallots and cook for a few seconds before adding the egg
- Once mixture resembles a light omelette, add peas, ham and prawns
- Stir well until all ingredients are heated through
- Add cooked rice and soy sauce to taste and mix until all ingredients are combined
- Serve onto warm plates and garnish with sliced shallots
Some Tips from Alison:
- Use long grain Jasmine rice and rinse several times before cooking to remove starch
- Always use peanut or vegetable oil NOT olive oil when making fried rice
- Use authentic soy sauce which can be purchased from a Chinese supermarket
Green Chicken Curry

Ingredients:
- Chicken meat cut into cubes 500GM
- Coconut milk 400 Mls
- Green curry paste 50 GM
- Fish sauce 20 Mls
- Lime leaves 4
- Green chillies 30 GM
- Sweet basil leaves 20
- Coriander leaves 20Gm
- Sugar To taste
Method:
- Heat 100 mls of coconut milk in saucepan and add curry paste. Cook over moderate heat for 3-5 minutes or when it smells fragrant
- Add cubed chicken and remainder of coconut milk and continue to cook over a gentle heat until the chicken is cooked
- Add chopped green chillies and lime leaves and cook for a few minutes
- Add fish sauce and sugar to taste
- Stir in basil leaves and coriander and serve with steamed jasmine rice
Steamed Wantons

Ingredients:
Filling
- Green Prawn meat 125 GM
- Pork mince (raw) 125 GM
- Coriander 15 GM
- Red Chillies 2 Number
- Rice wine 5 MLS
- Light soy 5 MLS
- Ginger 5 GMS
- Coriander 5 Sprigs
- Green Shallots 20 GM
- Cornflour 1 TSP
- Egg 1 Number
Ssealing
- Egg yolk and water: 1 combined with 20 mls water
- Wanton wrappers: Approx 30 in number
Method:
- Prepare prawns and pork as a smooth velvet paste using a food processors and a little salt and water to combine
- Combine meats with the remaining ingredients for filling
- Separate wanton skins and spoon a small amount of filling into each wrapper. Seal edges with egg mixture and bring all sides of the wrapper into the middle and squeeze like a parcel
- Place folded wanton onto a clean lightly greased tray and cover with a damp cloth to stop from drying out
- Heat water in a medium pan and allow a bamboo steamer to sit on top (It needs to completely cover the perimeter of the saucepan to stop steam escaping out the sides)
- Place wantons carefully in the steamer and don’t allow them to touch as they will stick together. An idea is to lightly oil the basket too as this will stop them from sticking to the bottom of the steamer!
- Serve with the appropriate dipping sauce and garnish
Some Tips from Alison:
Recipe makes approximately 30 wantons. A variety of dipping sauces can be used; sweet chilli, soy or coriander and lemon grass.
